95% Sangiovese & 5% Malvasia Bianca
Co-fermentation of Sangiovese and other grapes in search of acidity and freshness, with whole cluster macerations and ageing in cement.
60% of the grapes are vinified with varying percentages of whole clusters (from 30% to 50%) using the “cake” technique, which involves layers of whole, unpressed clusters alternating with layers of destemmed and crushed grapes. 20% of the mass is vinified with carbonic maceration, and the remaining 20% is processed classically with destemmed grapes but leaving the berries whole. Two months in cement before bottling.

Girotondo is mainly a Sangiovese with a bit of Malvasia.
The result is a wild and rustic red wine. It has refreshing notes of pomegranate, cherry and red currant. It has a light body and a hint of saltiness. sSuch a new way of producing Sangiovese! We are hooked.
