The grapes with botrytis have been selected and left to macerate shortly on the skins. Openly fermented in a wooden barrique. Left alone for 3 years before bottling.
This was a discovery that truly blew our minds. While tasting through different barrels at the winery, Hager Matthias mentioned a forgotten barrel of Riesling tucked away in a quiet corner of the cellar—one he said held something special. Naturally, we couldn’t wait to taste it.
What we found was extraordinary: an openly fermented Riesling, matured under flor yeast, quietly working its magic over time. At that moment, the wine still carried a gentle sweetness, wrapped in a cool, oxidative style that reminded us of Jura wines. It showed remarkable complexity, with layers of flavours unfolding and dancing across the palate.
We had a feeling the residual sugars would eventually ferment further, so we decided to bottle the wine in small sparkling bottles sealed with crown caps. And we were right.
Today, this gorgeous wine is no longer sweet but delicately fizzy instead. It retains its captivating complexity and playful oxidative character, making it a perfect companion for cheese platters and creamy desserts.
The label represent the fantastic old cellar where Matthias' brother Hermann keeps all the best vintages hidden. The cellar is an underground cave filled with thousands of Matthias' wines. Old vintages covered with thick mould resting happily in the shadows down in a spooky labyrinth. The beautiful design of the label was created by Matthias Bergsmann.
