43% Trebbiano, 43% Malvasia & 14% Vermentino

The Trebbiano was vinified in cement with 2-3 days of maceration, then racked at “cap rise” to maintain freshness while limiting extraction. Malvasia Bianca and Vermentino were vinified “in white” and fermented in stainless steel. After fermentation, weekly bâtonnage was performed.
