When Ponzichter is bottled, one barrel always remains in the cellar and is blended with the new wine the next year (solera system).
Spontaneous fermentation, one part mash and one part whole berries.
Matured in 40 year old oak casks, natural malolactic fermentation occures.
"Ponzichter" was the name given to the German-speaking workers by the Hungarians of the Sopron region. It means bean growers, in-fact they used to grow vegetables, mainly beans, between the vine rows.
The wine combines grapes grown on both Austrian and Hungarian soils resulting in a summery red: light in colour, slightly fizzy on the tip of the tongue. It is fun and fruity with notes of cherry and raspberry.
