Pinot Gris is destemmed and fermented 1 week on the skins, whilst the Riesling is pressed directly.
Weinschwärmer from 2Naturkinder is named after the moth that lives around the vineyards, a delicacy for the local bats. The cuvée is made of 75% Pinot Gris and 25% Riesling. The outcome is awesome: light oaky, salty, citrusy, a bit rum-like, some caramel, kumquat and red currant aromas. In the nose you have sweet notes but it is super dry on the palate.
