Each variety is destemmed and ferments separately in stainless steel tanks with indigenous yeasts. Couple of days of skin maceration. Spontaneous malolactic fermentation. On fine lees for three months in old barriques. No sulphites added.
Nimbus Albus from Kamara Winery is a cuvée of Assyrtiko and Malagouzia. The 2022 is a summery, refreshing white wine with a nice citrusy aromas and a cool light oxidative note. Mint, green apple and lime!
The 2024 has peach, yellow apple and pear, it is mild and fruity. We recommend to decant it, perhaps even open it one day before!
