50 % destemmed, 50 % whole bunch, 8 days of maceration, then pressed, alcoholic fermentation finished in old barrels, 12 months of ageing on the lees.

Pinot Noir Bambule from Judith Beck is elegant and light with nice complex flavours like sour cherry and hay. Expect a light fizziness at the beginning.
